As per me cloaking is an SEO technique in which the content showed for "search engine spiders" is different from what is presented for users. Many say that this is a "Blackhat SEO technique" but Google says that as long as doorway pages are visible and "crawlable", it will pass the webmaster guidelines.

With the help of cloaking, one can create two sets of pages. One for search engine crawlers another for regular human visitors. This enables retaining the good look and feel of the site for humans, while still being able to show highly optimized pages to the crawlers and thus generate high amounts of traffic from the search engines. Cloaking also prevents humans from seeing what kind of optimization techniques you are using and stealing your optimized pages.

But one interesting thing..  Do you know with cloaking is how to tell whether the arriving visitor is a search engine crawler or a human?

There are many levels of cloaking from black to white-hat.It all boils down to you intentions.Of course, Google allows the white-hat way.
Black-hat cloaking is when the content is misleading a query.Not agreed by search engines.
White-hat cloaking is used to optimize a landing page or log-in page in the favor of the search engine rules.
There are some darker shades of white that the SERPs agree to as well.
