I've never heard to it referred to as "footprinting". There are two types of footprints as far as I'm concerned as they relate to SEO.

1 - Footprints as others have said in the loosest definition are any traces Google can make to connect one site to another in their minds. If Google sees you're linking from one site to another from the same IP, they can deduce that you likely own both sites and will consequently award less link juice versus if you linked to a site on a different IP. The IP is the example of a footprint in this case. If you have a private blog network of a handful of sites you're using to boost your rankings, just one footprint can ruin the whole operation and make that network void or have Google knock your rankings once they figure out what you're trying to do.

2 - Footprints can also be used by SEOers to find web pages they wouldn't otherwise be able to find either using Google or some kind of page data harvesting software. It's typically any string of text which a number of web pages have in common so you can find that common "footprint" they share. So if you wanted to find WordPress blogs you might search for "powered by Wordpress" + your keyword (that would be your full footprint) and you'd find WordPress blogs related to whatever you're searching for.

footprinting is the term for SEARCH of a specific website. For example you want to search for a social bookmarking that is powered by pligg then you will do footprinting by typing "social bookmarking" "powered by pligg". note, not all social bookmarking powered by pligg will be shown cause 10% of the social bookmarking/webmaster change the text or erase "powered by pligg" text on the footer.
