Yes it is possible to target multiple countries with a single domain. But for that you need to focus on a few things like:

1. Your domain name should be a Top Level Domain
2. You need focus on getting more and more traffic from your targeted countries, rather than getting traffic from a single country.
3. Your website need to have some quality backlinks from the websites which are in top position in your targeted countries.
4. your site pages should have great social signals from the targeted countries.

Expanding a website to cover multiple countries and/or languages can be challenging. URL (in fact, we recommend using UTF-8 wherever possible) and remember domain name should be unique and high keyword search volume. For example, it would make sense to set a target of Canada for a site about ... specific to a single country, Google treats them as generic top-level domains.

Yes, it is possible to target a single domain for multiple countries.

I have seen some website ranking in multiple Google search engines. I am working on 2 websites which I am targeting on multiple locations. But having a ranking & traffic issues for one website because it is completely new and just few backlinks.

I think Google considers the domain and page authority, backlinks, Geo location of the business for ranking in a particular country.

It depends on your goals, but it sounds reasonable to target multiple countries, that share the same language.
For example, you can target not only USA, but USA+Canada+Australia+New Zealand... you got the idea.

Besides, in some specific countries competition for your products could be low, so it would be not so hard to get on the first page of SERP. I know cases, when SEOs targeted 10+ countries. In one case, they created different subdomains for every target country - e.g. es.sitename.com when target country is Spain. In other case, a bunch of sites with picked domains was created (according to special characteristics of different languages). These guys succeeded and got #1 for their main keyword in Czech Google.
