Apostrophes, google ranking updates and utter confusion. Please help!

Hello,
I have a new children's entertainment business and have recently realised that if 'childrens entertainer' (no apostrophe) is searched I don't rank. So I went and adjusted most of the relevant keywords and meta tags a few weeks back. When I log out of google and search 'children's entertainer, preston' I still appear after a few pages and am on the google map. But when I remove the apostrophe I don't rank at all still and am not on the map.
The weirdest thing is that I sometimes do pop up on the map for a second, then disappear. Or I appear but disappear if I zoom in/move the map about.
I'm not sure what else I should do to address this. I'm making my way slowly but surely up the rankings for every keyword/phrase apart from 'childrens entertainer' which unfortunately is the most searched term.
Please help!!
