The major difference between Doorway page and cloaking pages is:

Doorway pages are set of multiple similar pages created in search engines and redirect to the similar destination.

Cloaking pages are different URL pages for human  users and different for the search engines. They violate the Google's Webmaster Guidelines as they mislead users on different pages than desired by the users.

Both are black hat seo techniques. In cloacking the content presented to the search engine's spider is different to that of the users browser. Whereas doorway pages are the low quality pages whose main purpose is to rank a website as per some specific keywords which mainly acts as a doorway between the users and the content.
