I was wondering why the search engines have not yet introduced a new meta tag that targets negative keywords? If relevance is key, such a meta tag would stop your site from showing for totally irrelevant keywords e.g. the obvious example would be a negative keyword of "free" if your products cost something.

Any thoughts? Could this work or do SEO's just want to target absolutely everyone?

Search engines are less in favor of keyword tags. In fact Google has dropped meta keyword tags, so, there is no room for introducing negative keyword tags. But you can target negative keywords very easily. There are many tools available (Adwords Keyword tool) that helps you in negative keyword selection.

Google, yahoo and recently Bing is also announced that they are not considering keywords for the ranking factors, if you use the meta keywords in your website then there is no use of them for the search engine. The case of negative keywords Google use in Google adword where you can stop your ads when people are searching with these negative keywords like "Free".
