I will preface this post by letting everyone know, I am an IT professional for the last 16 years, I have limited experience with building websites, as I am usually requested to update current sites. One of my long time clients asked me to help build/update a site so they can maintain the content after. I have nearly completed the process and have a few questions about 301 redirects and not

I am in the process of moving a website to new web host. In the process we have built a new more modern website. Most of the pages are the same. We are using the 301 redirects for all of the pages we matched 1 to 1. We also used 301 redirects for a few pages that do not exist on the new site and directed them to an appropriate page to find the information that were looking for. A few of the pages on the old site are located in a folder/sub directory and the new web host where we input the redirects does not allow for the / symbol. This means we have a handful of pages that we cannot place redirects for in the new website. These pages will automatically redirect the user to the homepage.

As we look at the google ranking for the old site, [the owner is adamant about not losing google rank, although there has been little work done for SEO on the site built and basically abandoned since 2006 or before] it does not seem that any of the search results are bringing up anything besides the main/homepage. How can I verify this and if this is true, will it be a search engine ranking problem if we do not link the few pages that are in the folder/sub directory and these redirect to the homepage?

you can do which will show you some of the pages held within the index.
Its not always a complete list but will get you part of the way there.

The moving host wont harm your rankings in the slightest, its just a change of DNS as far as google is concerned.
The redesign however is the tricky bit. but if you have done all the 301 redirects correctly and not destroyed the site structure then hopefully it should go smoothly.
I would also try and find any external links and try and get them changed to point to the new site as well, this part can be slow but worth the effort in my opinion.
