            A 301 redirect is used when you move your domain to a new web host.The redirect tells search engine that your site has moved but still allows you to preserve your rankings.
            A canonical tag tells search engine bots that current page is secondary one and primary page is different one.This tag is mainly used when by anyhow same is opening at two or more different url's in a domain.This way,you can avoid duplicating the page problem.

Both are used to save the site from duplicity but there is difference. Canonical tags are used when more than one page of your site have same content then you use these tags on those pages which have less no of backlinks. 301 is used to redirect one page to other page. If you don't do this then google will find more than one page having same content and will penalize your site.

301 doesn't have to be a redirect between two domains, it can also be  from an old page url to a new url within the same domain.
Ex.: redirect from “domain.xom/OLD_about.html” => to “domain.xom/NEW_about.html”

canonical doesn't actually redirect, it used when you want to prevent duplicated pages  but still needed to view the page('s). 
Its common in situations like when a content table can be order by different column and then it changes the parameters in url or when you want to create landing page and follow the source.
Ex. : tablePage.php?order_by=name (or date/rank etc.)     or  formPage.php?affiliateID=321 (or 554/68 etc.)

Hi  there,

Both of them are used to move a page or redirect a page...but the basic difference is that canonical tag is used to tell the search engine that a page has  been moved and it has nothing to do with the visitors. In 301, visitors do see the page redirection.

Canonical Tag is used when you have multiple pages on your site which use the same content. Using a canonical tag , it can be shown that there is one original content and other pages use that content. This way we can make it easy for the Google bot to know which content is original and that content will be given priority in ranking.

301  is a permanent redirect. It is used to help Google bot and users migrate to a new URL for a page which was earlier present on another URL. It is advisable to give 301 permanent redirect instead of a 302  temporary redirect for better rankings.

The above 3 url are same and exact content. Normaly Search Engines doesn't like the duplicate content and give penalties too. So in this case you should put in every single page a rel canonical tag to the "master" page. For example we will chose "http://example.com/category-1/subcategory-1/demo-1.html".
