Get multiple google and Bing spots in serps?

Hi to all seo people here I hope you are well today !  !-!

Google and Bing both bringing up new seo serp features today and maybe for some it's more harder to get good ranking.
Big G claims showing only two results from one domain which is in my eyes a from of "shrinking".

But I see some websites claiming multiple spots in the serps in google and Bing.
Check Tiffany rings (ecommecre site) first page is coming up with multiple rings topics; gold-rings, sterling-rings, diamond-rings and so on...these are category pages.

Then check danlok; he comes up with multiple domains he has and his social media profiles.
Check deeper; danlok media; first page full of multiple topics, is he using category pages too?

Another interesting site; byrdie (wef member) they dominate the organic traffic in the beauty/cosmetic niches study their page structure.

Can you claim today in 2022 multiple serp spots with category pages with good content on it and links to subtopics (as non ecommerce site?)
Or is it better to have multiple domains? Multiple domains are more to work, more work on content creation, then posting to social media channels,  more tasks,
you can be burned out fast as single entrepreneur with tiny budget on multiple domans.

On the other side, one domain is more easy to handle with category pages but it's all eggs in one basket. But doing all the content creation here is a more simple process.

Or using subdomains today is the way to go here?
