How many keyword phrases should I target?

How many keywords phrases people would type into the search engines to seek out what your company provides and how many pages your site has.

I think 5 key phrase would be more than limitations. You should target maximum of 3 keywords in Title.

Well...a difficult one to predict...
That largely depends on the type of user...I was surprised to see the number of people targeting misspelled and LSI keywords... And since you just cannot determine keyword choices on behalf of all the users, why don't you seek help from a good keyword research tool?
If you want to learn by others' experiences... I started with Google Adwords tool as a beginner...but with growing competitiveness, I realized the need for a stronger partner... which is why I shifted to Keyword Country. I am happy with what it is doing for me.

You can target 4 to 5 keywords maximum in title and Title limit is 64 character so fit your keyword Title . SEO county is not free keyword research tool so i am always  favour with Google adwords tools.

Its all depends upon your service and user who looks for your service. You can also get those information by doing some keyword research.

First of all determine on what kind of service you are offering or promoting. Most of the user typed in long tail keyword. I suggest that you use Google Adwords.

For one page maximum number of keyword phrases should be 5 or 6. If you choose more than 6 keywords your site will not rank soon.
